My day to day is still the same old magic it's been now since moving down the road to Delaware...Rolling that thick clean blue smoke for longtime friends and family. I also occasionally do public safety work at Longwood gardens when the boss man allows. This summer has been Slamming for my smoked meats, fish, jerky business! Some would say Off the chain crazy! I'm at a good place with my Lang 84D wide body..it's fully dialed in and rolls that smoke so smoothly over the meats it's nearly insane. Making most men & some women seriously crazy when they smell whats cookin. Haha but in a serious tone.. I'm going on 5 years smoking meat for touring bands, musicians, and entertainers. I specialize in small batch smoked meats, fish and cold smoked cheeses and charcuterie trays. I have a long-standing relationship with Aberdeen Maryland's own "Ballyhoo". with which I create delicious and filling pre and post-show meals. I also vacuum seal leftovers for them to take on the road. I do not have a brick and mortar, no food truck and I recently turned down an offer to roll smoke full time for a local BBQ business here in town. I roll smoke my way, been doing it far too long to start taking orders from a college educated culinary student/executive chef. My friends say I'm crazy...I know far too much to allow my good name to be tainted by a hotshot. Come sit at the table with me..let's talk..I'm not a sideshow for your circus..I'm old skool when it comes to low and slow. If a group was looking for a top-notch no-nonsense straight shooting smoked meat, fish, outdoors-loving professional pitmaster who's spent the time learning from old skool swedes on the family farm during every break from school imaginable..someone who has enjoyed time learning with the King of Q himself at his home and then I would certainly entertain the idear.
